Chicken Primavera
*from Minute Rice
- 1 tbsp oil
- 3/4 lb boneless chicken breast cut into strips
- 1 c broccoli florets
- 1 c thawed frozen green peas
- 1 carrot cut into julienne strips
- 1 small red onion, chopped
- 1 (14.5 oz) can chicken broth
- 1/2 tsp dried basil leaves
- dash pepper
- 1-1/2 c Minute Brown Rice, uncooked
- 1/4 c grated Parmesan cheese
- Heat oil in large skillet.
- Add chicken; cook and stir until browned.
- Add broccoli, peas, carrots, and onions.
- Cook and stir until vegetables are tender-crisp.
- Stir in broth, basil, and pepper.
- Bring to a boil.
- Stir in rice.
- Return to boil.
- Reduce heat to low.
- Cover and simmer 5 minutes.
- Remove from heat.
- Let stand 5 minutes.
- Stir in cheese.
Makes 4 servings.
