Spanish Paella Frittata
* from Success Rice
- 1 bag Success Brown Rice
- 1/2 lb sweet Italian sausage
- 1/2 c chopped onion
- 1/2 c chopped red bell pepper
- 1/2 lb medium raw shrimp, shelled, deveined
- 6 eggs
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1 tsp paprika
- Prepare rice according to package directions.
- Let cool for 5 minutes.
- In 12-inch nonstick skillet, brown sweet Italian sausage over medium-high heat, breaking into small chunks as it cooks.
- Add onion and red bell pepper and cook until the onion and pepper are softened and sausage is fully cooked; about 4 minutes.
- Add shrimp and rice to skillet; stir to mix.
- Remove from heat.
- In medium mixing bowl, beat eggs with salt, black pepper, and paprika.
- Pour eggs over the sausage mixture and place the skillet over medium heat.
- Cover skillet and cook 12-15 minutes, or until center is set.
- Cut into wedges and serve.
Makes 4 slices.
